Cock-A-Leekie Soup
This soup with a funny name is considered the ‘national soup’ of Scotland, according to Scotland.org, where we got our recipe. Locked in our cozy apartment during a blizzard, we opted for this rich, BUTTERY-as-all-hell soup to keep us warm.
The Dish
Cock-A-Leekie soup
As the name implies (that is, if you’re not a 12 year old boy), the main ingredients in the soup are chicken and leeks. The recipe calls for half a gallon of chicken stock but we only had broth- using broth may have resulted in a thicker soup… the world will never know.
The pastry on top is a nice touch and made for some nice texture contrast against the soup.
The Verdict
Let’s just say you can really taste the entire cup of butter that goes into this soup – not in a bad way, necessarily, especially on a cold and snowy winter night!
S and E both agreed that the base is so rich and creamy that it could probably accommodate more vegetables than were called for – we’re thinking mushrooms, potatoes, basically anything that could go into a chicken pot pie.
